The soils in this block are well draining schist loam and the vines tend to thrive

but with a beating heart

Based around sherry-matured whiskies from Macallan and Highland Park

Matured for 14 months in 80% French oak (largely from small Burgundian coopers)

Hand-harvested bunches are fermented in ‘open-top’ fermenters before ageing in a mixture of new and one-year-old French oak barrels for ten months
